Slow Cooker Apple Sauce

On Friday morning I had court in the North Georgia Mountains.  After court, I took the long way home and drove through the mountains to my little college town of Dahlonega.  Along the way I stopped at Bud's Pink Pig in Cherry Log, Georgia for a delicious BBQ lunch and Hillcrest Apple Farm in Ellijay Georgia to buy my annual fall apples.  I made this applesauce last year it was a hit for me and my husband.  Hope you all enjoy it too!

Slow Cooker Apple Sauce
Ingredients:

10 Apples (I used honey crisp)
½ cup sugar
½ cup water
Cinnamon to taste
Vanilla extract to taste

Directions:

Peel and core the apples, then cut them into chunks.  Place apples in the crock pot.  Pour sugar and water over the apples.  Add vanilla and cinnamon.  (I went light on cinnamon, probably ½ tsp and heavy on the vanilla, probably 1 ½ tbs) Cook on high for 4 hours stirring occasionally.  When done mash up any remaining chunks with a potato masher.

You can serve it warm or chilled.

We prefer it warm over vanilla ice cream. ENJOY!

3 INGREDIENT CHOCOLATE PIE

My fiance was having a particularly bad day at work, so I wanted to surprise him with a quick and easy dessert to make his day better.  I ran in the grocery store and didn't see anything on the baking isle that inspired me so I picked up a few random things and decided to make a super easy chocolate pie.  It ended up being a hit with the fiance and with my co-workers the next day.   The best part is this pie is only about 220 calories a slice, so you don't feel guilty eating a piece, or two.  Hope you enjoy.

3 Ingredient Chocolate Pie

Ingredients:

Reduced Fat Chocolate or regular graham cracker crust
Lite Cool Whip
Chocolate Cream Cheese
(This time I used milk, but it comes in dark and white.  Any flavor would be delicious)

Put the cream cheese in your mixer and beat it for a few seconds to loosen it up a bit

Slowly whip in the cool whip.

Pour in pie crust and freeze for 1 hour or refrigerate for at least 3 hours. Enjoy!

Strawberry Pineapple Spa Water

I made this water to experiment with other flavors after I made my first spa water a few weeks ago.  First of all let me say spa water is like my new favorite drink.  If I take the time to make it, I wont drink anything else in my fridge until its gone.  It is really great for increasing your water intake.  I wanted to try different fruit and veggie combinations and this one is FANTASTIC!

Strawberry Pineapple Spa Water

Ingredients
  • 1/2 a cucumber
  • 1 lemon
  • 4 or 5 strawberries
  • 1 cup of pineapple
  • water

Put all the fruit in a pitcher, and fill with water.  Let it sit for 24 hours and then enjoy!

Texas Caviar

This is one of my favorite recipes to make for a party or any fun event.  My little sister in Delta Zeta had a party on Saturday night and she asked us all to bring something.  I brought texas caviar, fruit and my mom's famous fruit dip, and cake batter cheese cake squares.  I have adapted my version of this recipe to include only the parts I like, and I must say I am a big fan! Every time I take it to an event everyone always wants the recipe so it here is:

Texas Caviar a la Brandi

3 Cans of black-eyed peas
1 can of white corn
1 can of yellow corn
1 can of diced green chilies
chopped green onions to taste
1 can of diced tomatoes
(you can use fresh tomatoes, but I like the canned kind with the jalapenos mixed in)
salt and pepper to taste
1 small bottle of kraft zesty italian dressing

Drain all the canned ingredients and pour into a large bowl.
Add the onions and salt and pepper
Pour in the dressing
Serve with chips (fritos scoops or tostitos) and watch it disappear

Sassy H2O

In my efforts to make over my life and make healthier life style choices, I have spent hours searching pinterest for new tricks and tips. I pinned a picture of water with fruits and veggies in it, it's called Sassy Water and it's supposed to help you lose weight, however I'm not so sure about that. But anyway, here is how you make it and it's actually tastes VERY good, and I hope it will inspire me to increase my daily water intake. Here is the recipe:

Ingredients:
2 lemons
1/2 cucumber
10-12 mint leaves
3 quarts water

 Prep Time: 5 minutes

Chill Time: Overnight or 8 hours

Yields: 10-12 glasses

 Method:
1. Slice cucumber and lemons.
2. Place in the bottom of the pitcher.
3. Toss in mint leaves.
4. Add water
5. Chill overnight or for at least 8 hours.

It looks pretty in your fridge too!
